namaste, i'm lata jain, welcome to lata's kitchen malpua is a very popular indian dessert usually made for special occasions today, i'm going to make malpua, in a very easy and quick way lets see the ingredients required to make it for this we'll need

water - 1/2 cup cardamom powder - 1/4 tsp pistachio - 15, chopped almonds - 10, chopped clarified butter - for frying lets start making malpuas take milk powder and all purpose flour in a bowl and mix make a batter by adding little milk at a time i have taken full cream milk here


make a smooth batter without any lump it should neither be too thick nor too thin i have added all the milk, its still a little thick so i'll add some water batter is ready, it should of this consistency keep it aside for 8-10 minutes now we'll make sugar syrup for malpua take equal amount of sugar and water in a pan milk powder also contains sugar, so sugar syrup should not be very sweet / thick turn the heat on and let the sugar melt. keep stirring often.


sugar is melted, now add cardamom powder cook it for another 3-4 minutes you can also add saffron to it its been 3-4 minutes, lets check it take a drop of it in a spoon, let it cool and check with the finger tips, if its sticky then its ready turn off the gas we'll take a flat bottom pan for frying it oil is heated, turn the gas to low take batter in a spoon and pour it slowly in the pan


increase the heat a little they have started floating in the oil, now gently flip them fry them till light golden brown by flipping them often they are nice golden brown, turn off the gas take out the extra oil by pressing it between two spatulas put it in the sugar syrup similarly take out extra oil from all the malpuas and soak them in sugar syrup lets them soak in sugar syrup for 3-4 minutes similarly fry and soak all the malpuas


take out the mapuas from sugar syrup now garnish them with chopped almonds and pistachio you can also add rabri to them they are very soft you can make and refrigerate them; heat them in microwave before serving. malpua are ready. they are very soft and delicious. serve them hot. you can prepare them for any special or festive occasion. kids too love them. thanks for watching malpuas.
